Rhubarb Apple Crisp

Did I mention things were still crazy around here?

That you schedule your " to do" things around 4 month old babies.

But how can you not want to spend every moment with this cute little guy?


The daughter still has about a month left of Army life then she is home for good!
Things at the Farm


The fruit trees at the farm have all been in full bloom!


The cherry tree is loaded!


The apples are also covered in flowers!
I was at the farm yesterday to water the new fruit trees and the bees are busy doing their jobs of pollinating.
Hoping for great a great fruit crop.

My girlfriend called me while on the way home. She said stop, by I have a surprise for you.

It was a big bag of rhubarb!

 I came home and made the pipeliner a little treat for after dinner.

Rhubarb Apple Crisp

Chop up your rhubarb and apples. Put them in a large, shallow glass pan.



In a bowl mix together flour, oats, sugar, and spices.


Cut in your butter until the mixture is crumbly.


Spoon the "crumbs" over the rhubarb and apples.


Bake in a 375F. preheated oven for 40 minutes or until the top is browned and the apples are soft.

YUM!



Rhubarb Apple Crisp

7 cups rhubarb chopped
5 cups red apples chopped
1/2 cup sugar
1/2 cups brown sugar
1 1/2 cups rolled oats
1 1/2 cups all purpose flour
3 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon ginger
1/2 cup butter softened

In a bowl mix together flour, oats, sugar and spices. Cut in butter until you have a course crumb mixture. Set aside.

In a large shallow glass pan evenly spread your chopped rhubarb and apples. Spoon the crumb mixture over the top, covering the rhubarb and apples.
Bake 375 for 40 minutes.

I have quite a lot of rhubarb leftover I would like to save for making rhubarb/strawberry jam.
Can I freeze the rhubarb to use when the strawberries come into season? 
Any ideas would be great!

  5. I don't know about rhubarb so I'm no help with the freezing question but the crisp looks fabulous! The baby is just too cute and the fruit trees are beautiful!! :)
