Blueberry scones

Winter still has us in its grip!

 Last week we had a bit of a warm up.
The temperatures went above freezing for a day or so.

The snow began to melt,
but the ground underneath is still froze.
We had a lot of running water with no place to go.

Then it got cold again!
Everything froze.

What a mess!

Getting anything else moved from the farmhouse is now on hold!



The roads are treacherous!


More snow predicted for this weekend!






I finally found some time to bake.

Nothing to complicated.

I passed by some blueberries on sale the other day.



The little man, and the pipeliner
love to have them in pancakes.

But I thought some blueberry scones would taste great with a steaming hot cup of coffee.

This is such a simple recipe!


7 ingredients,
one bowl,


and one baking sheet.


One tastey, blueberry filled scone!



Blueberry Scones

2 cups all purpose flour
2 tsp. baking powder
2 tbsp. sugar
1/2 tsp. salt
1/4 grated nutmeg
1 cup blueberries
1 1/2 cup whipping cream

Preheat oven to 425 F.

In a large bowl stir together flour, baking powder, sugar, salt and nutmeg.
Toss blueberries with the flour mixture.
Stir whipping cream into the flour mixture just until moistened.
Turn dough out onto a floured surface.
Gently lift and fold dough four or five times, making a quarter turn between each fold.
Place dough on parchment lined baking sheet.
Form dough into a 7 to 8 inch square, 1 inch thick.
Using a floured cutter score dough into 12 pieces, not cutting the dough all the way through.
Bake in upper half of oven, 17-20 minutes.

I love mine drizzled with a touch of honey!

  1. These look delicious!!! Would you believe that I have never made scones before?! But after your post I feel inspired to try!!! And this weather is so tricky with the melting and freezing. Hard on our sump pump and underground pipes! I hope you get that date night... Stay warm...I think you guys are in for a bit more snow than us....I'm hearing ridiculous amounts so stay safe!!!     1. My son had to buy a new sump pump in his house. Glad it went bad before things got really wild around here! I love scones, but the rest of my family doesn't. Not enough of a sweet treat for them. lol..Have a great Sunday!!

  2. Weather is the same here, last week all good and tons of melting snow everywhere, but now it's back to -20C and all frozen solid again. Gosh this is a long winter!     1. Simple recipe. Sometimes I make it with cranberries and cinnamon. I know your winter has been horrid too. Spring will seem so sweet this year. (if it ever gets here!)

  5. Those look absolutely scrumptious! And your roads look terrible. Our snow and ice has almost all melted. However, we are supposed to get 6-12 inches this weekend, or so I've heard.

  6. Our weather is kind of the same as yours! Looking forward to long walks in warm weather, standing out in the garden and feeling the warmth of the sun on my bare arms. Your scones look delicious, Liz! I grow blueberries and last year was a banner year for them. However, I don't have any left - we ate them all (and the birds helped themselves to the berries as well). :)

  7. We are getting a taste of spring. And thank goodness, I was so done with winter. I have some blueberries in the freezer, these will be great for Easter breakfast.
